Banana & Blueberry Quinoa Porridge

Banana & Blueberry Quinoa Porridge is a nourishing and tasty breakfast option for kids. This warm and comforting porridge blends quinoa with sweet, ripe bananas and juicy blueberries, creating a deliciously creamy and fruity dish. The quinoa provides a protein-rich base, while the bananas add natural sweetness and the blueberries offer a burst of tangy flavor. Perfect for a satisfying and wholesome start to the day, this porridge is both nutritious and kid-friendly, offering a balanced combination of vitamins, minerals, and fiber.

Ingredients:

1/3 cup Quinoa (tricolor, rinsed and drained)

1 cup Soy Milk (divided)

1/3 cup Water

1/8 tsp Cinnamon

1/16 tsp Sea Salt

2/3 Banana (small, mashed)

1 cup Blueberries

2 2/3 tbsps Hemp Seeds


Directions:

1. Add the quinoa, 2/3 of the milk, water, cinnamon, and salt to a pot. Bring to a boil.

2. Reduce heat to low and simmer covered until the liquid has been absorbed and the quinoa is tender but still chewy, about 15 minutes.

3. Remove from the heat and let stand for five minutes. Fluff with a fork and fold in the mashed bananas.

4. Divide evenly between bowls and serve topped with the blueberries, hemp seeds, and remaining milk. Enjoy!

Leftovers

Refrigerate in an airtight container for up to three days.

Serving Size

One serving is equal to approximately 3/4 cup.

Meal Prep

The quinoa can be prepared ahead of time and kept stored in the refrigerator. Reheat on the stove or in the microwave when ready to serve.

Additional Toppings

Use strawberries, raspberries, and/or blackberries instead. Use pumpkin seeds, sunflower seeds, and/or chia seeds instead.
