Lemony Dill Veggie Sandwich
Ingredients:
1/2 Carrot (medium)
1 tsp Fresh Dill (finely chopped)
1 tbsp Lemon Juice
1/4 tsp Sea Salt
2 slices Gluten-Free Bread
2 tsps Hummus (divided)
1/2 Tomato (small, sliced)
1/4 Cucumber (small, sliced)
1/4 cup Red Onion (small, thinly sliced)
Directions:
1. Use a vegetable peeler to make carrot ribbons. Add them to a bowl with the dill, lemon juice, and sea salt. Toss to combine.
2. To assemble the sandwich, lay out the bread and spread hummus on each slice. Add the tomato, cucumber, onion, and carrot ribbons. Close the sandwich and enjoy!

Best enjoyed immediately. Refrigerate in an airtight container for up to two days.
