Savory Oats with Poached Egg

Transform your breakfast routine with this hearty and nourishing Savory Oats with Poached Egg dish. Instead of the usual sweet toppings, these oats are cooked with savory ingredients like garlic, herbs, and a touch of parmesan, creating a rich, comforting base. Topped with a perfectly poached egg, the creamy yolk adds a luxurious texture, blending beautifully with the oats. This meal is not only satisfying but also packed with protein and fiber, making it an ideal way to start your day with energy and flavor.

Ingredients:

1 1/2 tsps Apple Cider Vinegar

1 Egg

1/2 cup Oats (rolled)

1 cup Chicken Broth

1 tsp Tamari

1/2 tsp Sesame Seeds

1/2 stalk Green Onion (chopped)

1/2 Avocado (sliced)

Sea Salt & Black Pepper (to taste)


Directions:

1. Bring a pot of water to a rolling boil and add the vinegar. Begin stirring your water with a spoon to create a whirlpool. Carefully add your egg(s) to the water. Cook for three to four minutes or until cooked to your liking and then use a slotted spoon to carefully remove from the water. Add the egg(s) onto a plate lined with a paper towel to soak up the excess liquid.

2. Meanwhile, add the oats and broth to a pot. Bring to a gentle boil over medium-low heat and cook for eight to 10 minutes. Stir frequently. Once cooked through, add the tamari and stir.

3. Add the oats to a bowl and top with the egg(s), sesame seeds, green onion, and avocado. Season with salt and pepper. Enjoy!


Notes:

Leftovers

Refrigerate in an airtight container for up to two days. Eggs are best served fresh or you can hard boil the eggs if you'd like to prepare it in advance.

Serving Size

One serving is equal to approximately 3/4 cup of oatmeal with one egg and toppings.

More Flavor

Add chili flakes or sriracha on top.

No Chicken Broth

Use water instead.
