Coconut Chia Pudding

Coconut chia pudding is a delicious and nutritious breakfast option that’s both easy to make and packed with health benefits. Made from chia seeds soaked in creamy coconut milk, it offers a perfect blend of healthy fats, fiber, and protein. The chia seeds swell in the coconut milk, creating a rich, pudding-like texture that's both satisfying and refreshing.

Ingredients:

3 tbsps Canned Coconut Milk

3 tbsps Water

1 tbsp Chia Seeds

1/4 tsp Vanilla Extract

1/2 cup Vanilla Life Shake (New & Improved

Vanilla Life Shake (Use scoop inside Life Shake

container, 3 scoops per serving. 3 scoops = 1/2 cup)


Directions:

1. Blend all ingredients in Nutribullet (except chia seeds), 1/2 batch at a time. Add chia seeds and mix. Spoon into parfait cups and refrigerate for at least one hour or until chia seeds have set. Top with cinnamon, fresh blueberries, or sliced peaches or apples!

2. Stir well and divide into cups or containers if on-the-go. Enjoy!

Leftovers

Refrigerate in an airtight container up to five days.

Serving Size

One serving is equal to approximately 1.5 cups of chia pudding.

More Flavor

Add monk fruit sweetener, cinnamon or cardamom.

Additional Toppings

Top with shredded coconut, berries, banana slices, or nuts.
