Savory Amaranth Pancakes

Savory amaranth pancakes are a nutritious and delicious breakfast option that combines the gluten-free goodness of amaranth flour with fresh vegetables and herbs. Simply mix the flour with a variety of flavorful additions, cook until golden brown, and serve with your favorite toppings. These pancakes are packed with protein and fiber, providing a satisfying and energizing start to your day!

Ingredients:

1/3 cup Amaranth

2 tsps Ground Flax Seed

1/3 tsp Baking Powder

1/3 tsp Garlic Powder

1/3 tsp Sea Salt

1/2 cup Plain Coconut Milk (from the carton)

2 tsps Extra Virgin Olive Oil (divided)

1/4 cup Unsweetened Coconut Yogurt

1/3 cup Cherry Tomatoes (halved)

1 tbsp Parsley (chopped)


Directions:

1. Add the amaranth to blender or food processor and blend until a flour consistency is achieved. Transfer to a mixing bowl and add the ground flax, baking powder, garlic

powder, and sea salt. Mix well to combine.

2. Add the coconut milk and half of the oil. Stir until a thick but slightly runny batter is formed. Let it sit for five minutes.

3. Meanwhile, warm the remaining oil in a non-stick frying pan or skillet. Scoop 1/3 cup of batter per pancake onto the pan and cook for approximately five minutes on each side, until browned and cooked through.

4. Serve with the coconut yogurt, tomatoes, and parsley. Enjoy!

Leftovers

Refrigerate in an airtight container for up to five days.

Serving Size

One serving is equal to two pancakes with toppings.

Additional Toppings

Fried eggs.

No Amaranth

Use quinoa or millet instead.
