Meatball Lettuce Wraps

These Meatball Lettuce Wraps are a delicious and fun way to get your kids excited about eating healthy! Packed with lean protein, these bite-sized meatballs are made from ground turkey or chicken, seasoned with garlic, herbs, and a touch of Parmesan for extra flavor. Instead of heavy bread or wraps, we use crisp lettuce leaves to create a low-carb, gluten-free alternative that’s just as satisfying.

Ingredients:

3 3/4 ozs Extra Lean Ground Beef

Sea Salt & Black Pepper (to taste)

1/3 cup Grated Carrot

2 tbsps Parsley

1/2 head Boston Lettuce (peeled apart into leaves and washed)

1/4 Lime (cut into wedges)


Directions:

1. Preheat the oven to 400ºF (205ºC) and line a baking sheet with parchment paper.

2. In a large bowl mix together the ground beef, salt, and pepper. Roll the beef into roughly one-inch balls and place them on the baking sheet. Bake in the oven for 20 to 25

minutes or until cooked through.

3. Divide the cooked meatballs, carrot, and parsley between lettuce leaves. Squeeze lime juice on top and enjoy!

Leftovers

Refrigerate in an airtight container for up to three days.

Serving Size

One serving is approximately two to three lettuce wraps.

More Flavor

Add garlic, sesame seeds, ginger, smoked paprika, or chili powder the meatballs.

Additional Toppings

Crushed peanuts, peanut sauce, salsa, tahini dressing, or mashed avocado.
