Chorizo & Potato Tacos
These Chorizo & Potato Tacos are a high-protein, flavor-packed dinner that kids will love! The savory chorizo and tender potatoes come together in soft tortillas for a perfect balance of hearty and satisfying. Ingredients:

2 1/2 ozs Chorizo (casing removed)

1/2 Yellow Potato (medium, chopped)

1 tsp Taco Seasoning

Sea Salt & Black Pepper (to taste)

2 Corn Tortilla (small)

2 tbsps Salsa

1 tbsp Cilantro


Directions:

1. Heat a pan over medium-high heat. Add the chorizo, and cook for about seven to ten minutes or until cooked through and crumbled. Remove from the pan.

2. Add the potato to the pan and turn down the heat to medium. Stir and cook for about 12 to 15 minutes or until browned and cooked through.

3. Transfer the chorizo back to the pan. Add the taco seasoning and stir. Cook for another minute then taste and add salt and pepper as needed.

4. Divide the chorizo mixture between tortillas. Top with salsa and cilantro. Enjoy!


Notes:

Leftovers

Refrigerate the chorizo mixture in an airtight container for up to three days. Assemble tacos before serving.

Serving Size

One serving is equal to two tacos.

Additional Toppings

Add avocado and pickled red onion.
