Creamy Blueberry Oat Bran Porridge
This wholesome, high-protein breakfast is a delicious way to fuel your kids for the day ahead. Creamy oat bran is combined with sweet blueberries for a burst of flavor and antioxidants, while offering a good dose of fiber to support digestion. Ingredients:

1/4 cup Oat Bran

1 1/4 cups Oat Milk (plus more to serve)

1/4 cup Blueberries (chopped)

1/4 tsp Stevia Powder

1 tbsp Brazil Nuts (toasted, chopped)


Directions:

1. In a large saucepan over medium heat, add the oat bran and toast for 30 to 60 seconds, stirring often.

2. Add the milk, blueberries, and stevia powder and bring to a boil. Reduce the heat to a

simmer and cook for three to four minutes, stirring constantly, until thickened.

3. Remove from the heat and pour into a bowl. Add a small amount of milk, as needed, for desired consistency. Top with Brazil nuts and enjoy!

Leftovers

Refrigerate in an airtight container for up to three days.

Serving Size

One serving is about 1 1/2 cups.
