Bacon, Egg & Potato Hash

Bacon, Egg & Potato Hash is a comforting and flavorful lunch option that’s sure to be a hit with kids. Ingredients:

3 slices Bacon (diced)

1/2 Russet Potato (medium, peeled, diced small)

1/4 tsp Garlic Powder

1/4 tsp Onion Powder

1/4 tsp Sea Salt (or to taste)

2 stalks Green Onion (chopped thinly)

2 Egg


Directions:

1. In a medium non-stick skillet, cook the bacon over medium-high heat until nearly done, about three minutes. Remove from the skillet and place on a paper towel. Keep some of the bacon fat in the pan.

2. Add the potatoes in a single layer to the skillet. Let them cook without stirring for two minutes, then flip.

3. Continue to cook the potatoes, stirring occasionally, until browned and nearly cooked through, about eight to 10 minutes. Add the garlic powder, onion powder, and salt during the last minute of cooking.

4. Add the green onions and cooked bacon back to the pan. Spread everything out evenly. Create pockets for the eggs, and carefully crack each egg into the pocket. Cover and cook until the whites are set and the yolks are cooked to your liking. Divide evenly between plates and enjoy!

Leftovers

Refrigerate in an airtight container for up to two days.

Serving Size

One serving is approximately one egg and one cup of potatoes and bacon.
