Antipasto & Pepperoncini Salad

This Antipasto & Pepperoncini Salad is a vibrant and flavorful dish that combines an array of Mediterranean ingredients into a refreshing and satisfying salad. Ingredients:

1/4 Lemon (juiced)

1 tbsp Extra Virgin Olive Oil

Sea Salt & Black Pepper (to taste)

1/8 head Green Lettuce (leaves separated)

1/4 cup Cherry Tomatoes (halved)

1/4 cup Assorted Olives

1 1/4 ozs Pepperoncini Peppers (drained)

1 oz Salami, Mild


Directions:

1. For the dressing, mix together the lemon juice and oil in a small bowl. Season it with salt and pepper.

2. Arrange the remaining ingredients in a salad bowl. Drizzle the dressing on top and enjoy!

Leftovers

Refrigerate salad and the dressing in separate containers for up to two days.

Serving Size

One serving is equal to approximately two cups.
